Vic’s One pot chicken burrito bowls!

Why this is special to me.
This recipe is special to me because it is the first dinner I have made with one of my roommates, Mike. He is a fantastic cook, once a week we have a "family dinner" with all of our roommates. Every Sunday, Mike makes something different. So being taught how to make this was very fun and special to me.

Instructions:

  1. Start by sauteing onions in two table spoons of olive oil until they start to soften.
  2. Season diced chicken with one tsp of salt and half of black pepper.
  3. Add chicken to pan and cook over med high heat until chicken starts to brown.
  4. Move chicken to one side of pan on other side of pan add additional tablespoon of olive oil.
  5. Sauté uncooked rice until starts to brown.
  6. Stir in beans, tomatoes, chicken broth, garlic powder, paprika and bring to simmer.
  7. Cover and reduce heat to low.
  8. Let cook until most liquid had absorbed
  9. Tempature cooked at: High heat initially, when rice browns, simmer until fully cooked.

    Preparation time is around 20 minutes.
