Vic’s One pot chicken burrito bowls!

Why this is special to me.
This recipe is special to me because it is the first dinner I have made with one of my roommates, Mike. He is a fantastic cook, once a week we have a "family dinner" with all of our roommates. Every Sunday, Mike makes something different. So being taught how to make this was very fun and special to me.
Solid ingredients:
- Minced onions
- Tomatoes
- Chicken
- Garbanzo beans
- Rice
- Cheddar cheese
Wet Ingredients:
- Olive oil
- Chicken broth
Seasonings:
- Garlic powder
- Taco seasoning
- Paprika
- Salt and pepper
Instructions:
- Start by sauteing onions in two table spoons of olive oil until they start to soften.
- Season diced chicken with one tsp of salt and half of black pepper.
- Add chicken to pan and cook over med high heat until chicken starts to brown.
- Move chicken to one side of pan on other side of pan add additional tablespoon of olive oil.
- Sauté uncooked rice until starts to brown.
- Stir in beans, tomatoes, chicken broth, garlic powder, paprika and bring to simmer.
- Cover and reduce heat to low.
- Let cook until most liquid had absorbed Tempature cooked at: High heat initially, when rice browns, simmer until fully cooked. Preparation time is around 20 minutes.
